About a year later than expected, and with a new franchise owner, a new Tijuana Flats restaurant will open at 5890 State Road 100, Suite 103, in Palm Coast.
Franchise owner Joe Jeffries said his group is targeting a soft opening on Dec. 26 for the Tex Mex restaurant.
“We’ve got the equipment all in place. We’ve got a bunch of contractors in here right now working with electrical,” Jeffries said earlier this week. “We’re just getting a mural put on the wall and some graphics and hopefully our (front of store) signage will come in. There has been a lot of delays, a lot of hiccups. But it's coming along now.”
One of the delays was a change of ownership groups, Jeffries said. Jeffries’ group also owns the Tijuana Flats franchise in North DeLand and has territorial rights in Ormond Beach and New Smyrna Beach.
“We’re looking to grow in those areas as well,” he said. “We’re looking at sites right now (in Ormond), but we’re trying to get the Palm Coast (restaurant open) first.”
The restaurant is located at the corner of State Road 100 and Town Center Boulevard, just south of the Hilton Garden Inn. The plaza’s parking lot connects to the Hilton Garden Inn and to Panera Bread to the west.
“We're excited about opening, that's for sure,” Jeffries said. “It's been an anxious time getting it ready, but we can't wait. Dec. 26 is a strong date right now. It’s a weird date to be saying, but we’re willing to have a soft opening following that time and kind of get all the kinks out and then roll into the new year.”
Tijuana Flats is known for building community connections. Jeffries said his group has begun doing that in Palm Coast.
“We like to immerse ourselves in the community. That's one thing that we really we strive for, to connect with the schools, the churches, the hospitals. Two of my managers are on site right now, starting that process. It's a really neat community here in Palm Coast. So we're excited to see how we’ll do. We think we’ll do really well.”
